$10 Weekday Gourmet: Amazing chicken recipe from fridge to table in less than 45 minutes (Serves 4-6)

If you know me well you know that one of my favorite words is “cheap”… not in the sense that I like low quality things. I’m actually quite the opposite. I tend to like very high quality things (food, clothing, jewelry, vacations) but I do my best to acquire these things at cheaper prices than most people would pay.

My approach to food is no different. I love dining out at high quality and highly recommended restaurants. But I’ll be honest. I can’t afford to eat out every night and honestly, I don’t think I’d want to. I like cooking way to much and after a long day of work, it’s sometimes nice to just chill at home.

I think most people are like me. People want food that tastes a good as possible, as quickly as possible, and as cheaply as possible. I want to start sharing some recipes that I’ve found that have allowed me to do just that!

As I’m writing this post, I’m sitting here eating a meal that I’ve made TWICE (yes, I said it, twice) in the last week. The Sheet Pan Chicken and Mushrooms with Parsley Sauce recipe by Food & Wine has been my favorite and I wanted to share this meal and recipe with you. I have a few suggestions for how to make this recipe as quickly and cheaply as possible and the best side dishes to pair it with.

This recipe is delicious and it really is easy. The parsley sauce combined with the roasted lemons is a match made in heaven…. And yes, you heard that right. you CAN eat roasted lemons. Skin and all. Just make sure you slice them thin and remove any seeds.

I’ve been blessed to live in a town where I have an abundance of grocery stores that are all pretty close together. My husband and I try to stick to a strict budget of about $70 a week for ALL our groceries. We eat at home at least 5 nights a week and I bring my lunch to work from home as well…. All that to say is that we have quite a few meals to make with a relatively small budget. I have to take advantage of all the stores in the area to create delicious meals without going over budget. I’d honestly rather save money on food and put some of our savings in our vacation fund.

For this recipe we did our shopping at Nam Dae Mun Farmers Market in Smyrna, Georgia. I warn you, you can get some great deals here but the shopping experience is always an… experience. But again, for me, it’s worth it for the savings.

I spent $8.13 plus tax for most of the recipe ingredients (I had garlic, olive oil, and red wine vinegar in my pantry).

  • 6 boneless/skinless chicken thighs: $3.95
  • 1 Bunch of Parsley: $0.69
  • 16 oz of White Mushrooms: $2.49 (This is cheaper than the mushrooms suggested in the original recipe)
  • 1 Lemon: $1.00

Tonight I paired this recipe with mashed potatoes. The first time I made it I served it with Garlic Quinoa and broccoli (we always have quinoa in the pantry and broccoli in the freezer). Regardless, I suggest serving with a carbohydrate  and a green veggie.

My steps for getting this recipe plus two side dishes on the table in less than 45 minutes.

Step 1: Preheat oven AND empty sheet pan to 450 degrees Fahrenheit.

Step 2: Season chicken with salt and pepper.

Step 3: Place chicken and olive oil on pan and let roast for 5 minutes.

Step 4: Cut mushrooms and lemons while chicken is roasting. Toss with olive oil.

Step 5: Add mushrooms and lemons to pan with chicken and allow to roast for 30 additional minutes.

Step 6: Prepare quinoa as outlined on package. I suggest cooking in chicken broth instead of water.

Step 7. Chop parsley and garlic and mix all ingredients for the sauce.

Step 8: Cook broccoli as desired when there’s just 5 minutes left for the chicken to roast (microwave or stove top with salt and pepper is easiest).

Step 9. Serve and enjoy!

Biscuits the size of a Cat’s Head: Eating Asheville – Biscuit Head

Is there any meal that’s better than breakfast? I mean, come on. It’s the first meal you eat, it sets your pace for the day, and it’s the perfect paring of hearty, sweet, and savory.

While in Asheville we were on the hunt for a delicious and simple breakfast spot. After getting some suggestions from friends, and searching around yelp, all we could find were spots downtown that had really long wait times. I did a little searching online and came across a fun article by Bon Appetit Magazine and decided to give one of their suggestions a try. After a lot of searching, pondering, and debating, we ended up putting Biscuit Head in our GPS and ended up at their unassuming Biltmore Avenue location.

After pulling up to the restaurant we were a little skeptical to give this restaurant a try. It was raining out, it was a little chilly, and there was a VERY long line coming out of the door. I don’t like lines, I’m not a huge fan or rain, and because we were traveling in the end of April I was hoping for higher temperatures. I complained a little, sent my husband to get in line, and I parked the car. I decided that I needed to figure out why people felt the need to commit to eating at this restaurant.

My oh my… I’m so glad we decided to eat here. The restaurant is designed to have a line. The space inside is pretty small so by time you get to the front of the line and pay for your food, someone else is leaving space at an empty table (kind of like the lines at Chipotle). We made it inside pretty quickly and were greeted by so many happy faces!

At the door entrance there was a chalkboard that read cat head biscuits. I had no idea what that meant until I was served my food.

The biscuits here are HUGE and super filling. I ordered the Mimosa Fried Chicken Biscuit with a double shot of espresso. William ordered the Fried Catfish Biscuit and a regular coffee.

After ordering we were given our number and were directed to take a seat anywhere we liked. We ended up sitting a the communal table. William sat on the side with chairs and I sat on the side with the bench. I’ll admit it was a little difficult to get in and out of my seat so William was in charge of getting any jelly, water, or coffee refills.

… Speaking of Jelly. They have an amazing jelly bar for you to try out. Customers can purchase jelly, sauces, and biscuit mix to use at home.

Our food was prepared and out to our seats in less than 10 minutes. Like I said before, the biscuits are huge and very filling. Both biscuits were absolutely amazing. I liked William’s catfist biscuit the best (even though I’m not a fan of catfish). The poached eggs that topped our biscuits were cooked perfectly as well.

Falling in Love at Taco Tuesday + Restaurant Review: Takorea

My wonderful husband and I have a very long tradition of what we like to call “Taco Tuesday”. Let’s back track a little bit. If you know William and I personally you know we have a very interesting history. We started dating in high school and through some of college. I broke up with him… We got back together… He then broke up with me… and about a year and a half later (and after we graduated from college) we decided to give our relationship another try. This last time around we stumbled upon our favorite tradition, Taco Tuesday.

At the inception of Taco Tuesday, I was working in Kennesaw and William was working in Smyrna… I was living in Smyrna and William was living in Kennesaw (so complicated). We started meeting up at a conveniently located Los Reyes, a local Mexican Restaurant, after work on Tuesdays and it just stuck. There’s nothing like sitting down at a cheap restaurant filling up on chips and salsa to really bring two people together. There’s no expectations or high standards to set with Mexican food… It’s just good food, and good conversation.

For most, Taco Tuesday just means eating Mexican on a Tuesday which isn’t really a big deal, but for us, Taco Tuesday is how we fell in love (cue sappy sigh and tears). But in all honestly, it’s true. It’s how he and I knew that we were supposed to be together. I typically showed up kind of tired from a long day of work and William always showed up in his Target red and khaki… and it was perfect. Taco tuesday is what we look forward to. Some couples look forward to that weekend jog, others look forward to a night out on the town… We look forward to a booth, great eats, and lots of laughter.

Taco Tuesday has such a special place in my heart. It was actually after a Taco Tuesday date that William proposed to me. We’ve promised each other that the spirit of Taco Tuesday is a must no matter what we face in our lives and our marriage and for the past 2 years we’ve kept the tradition alive. Taco Tuesday is where we share our hearts with each other, talk about current events, and sometimes its where we settle some of our disagreements. You can’t be unhappy sitting across the table from your husband while stuffing your face with a queso covered chimichanga… it’s just not possible.

Currently, both my husband and I have conflicts on Tuesdays nights and our Taco Tuesday has morphed into our international inspired date night. We eat Mexican as often as possible but sometimes we like to switch it up. This week, we went out on a Wednesday evening and tried a local restaurant, Takorea.

I’ve been to Takorea’s main location before in Midtown Atlanta so this time we decided to try out their smaller location in Dunwoody! Their food is unique because it’s a morph of Mexican and Korean flavors. It’s easy to get to and has such a great atmosphere. Menu items range from $2.80 – $10.50. There is an extensive drink menu as well.

We arrived at the restaurant around 7:30 p.m. on Wednesday and were greeted enthusiastically. The employee at the font counter told us all of the day’s specials and helped us understand everything on the menu. table

The Tacos

The tacos are great here! I’ve had a few different kind at the midtown location. William ordered one of the specials – It was a sweet and sour chicken taco. It was nice and crunchy, and tasted great!

The Fries

Takorea’s Sesame French Fries are some of the best fries out there. They are crunchy, have a perfect sesame flavor and are served with a side of chipotle ketchup (heavenly)! They served them in a Chinese takeout box so they get extra points for the cuteness factor.

Both William and I both ordered Bibim-Bop’s which are Takorea’s take on the Bibimbap. I ordered mine with the Kimchi Fried rice and beef. William ordered his with beef as well but opted for the plain rice. These bowls are HUGE and super filling. We both had enough to take home and eat for lunch the next day. The beef is tender and delicious and I love the flavor of the Kimchi fried rice.

ATMOSPHERE: 9  – The atmosphere for the restaurant was great, especially on a spring or summer day. There’s a large patio that is an extension of the restaurant. There are a few TVs and quite a few fans. The music was old school rock and was playing at a perfect level that did not encroach on our conversation. We went during the height of pollen season and I was impressed with how clean they were able to keep the outdoor area.service

Taste: 9 – The food is delicious. My only warning is that this might not be the place for you if you can’t handle unique flavors. Our food arrived very quickly and our server was extremely nice! service

Service: 9 – Great service. We were greeted by a friendly employee. It was our first time at this location so she helped us maneuver the menu since it is different than the midtown location. Our food came out exactly as we ordered and they were helpful with clearing our extra plates from our table.service

Overall: 9. We really enjoyed the restaurant and love that we can enjoy Takorea’s delicious food without having to tackle the parking and traffic issues at the midtown location. We will be back for sure!service
