Whether it’s back to school time or just a busy week for you, one pan meals are an amazing option with minimal clean up and that typically come together pretty quickly.
Today I’ve round up 5 weekday one pan meals that will have food on the table for your family in 40 minutes or less (most of that time will be cooking time). Cook just one of these recipes this week or cook them all!

When making sheet pan meals the best tip I have for you is to avoid over crowding the pan (Ignore this advice for a casserole type meal)! Use two sheet pans if you need to. Overcrowding a pan can lead to food that is stamed instead of roasted or crispy. If you’ve ever struggled with soggy sheet pan meals, overwording is probably your issue.
I recommend having at least two half sheet pans and two eighth sheet pans. A half sheet pan is 13″x18″ and is pretty standard for home cooks. Use a half sheets for cookies, sheet pan recipes, roasting, and even making cakes. A second size I recommend is an eighth sheet pan. An eighth sheet pan is perfect for making a single serving or warming up leftovers.

Monday

Notes and Recommendations: If you adjust the recipe measurements make sure you don’t overcrowd the pan. Use two sheet pans if needed to avoid your ingredients steaming.
Meal Prep Tips: All the veggie prep can be done ahead of time and refrigerated.
Taco Tuesday
Total Time from Start to Finish: 40 minutes
Notes and Recommendations: Make sure you use corn tortillas (options are white or yellow) Get creative with your toppings!
Wednesday
Baked Ham and Cheese Sliders with a Side Salad
Total Time from Start to Finish: Less than 40 minutes
Notes and Recommendations: No, these sandwiches aren’t healthy but they are delicious. Balance out the richness of the sandwiches with the lighness of a side salad! This recipe makes a lot so feel free to cut the recipe in half or send sandwiches with the kids the next day for lunch at school.
Thursday
Total Time from Start to Finish: Approximately 45 minutes.
Technically this one isn’t a sheet pan dinner. It cooks in a casserole dish BUT it’s still a one pot dinner so I think it counts.
Notes and Recommendations: Don’t substitute the chicken. You WANT to use bone in and skin on! Serve this with a side of microwavable rice or a side salad.
Friday
Total Time from Start to Finish: 15 minutes
The recipe is for a single serving. Adjust ingredient potions accordingly.
Notes and Recommendations: Customize the pizzas by using toppings of your choice.
