Savory Breakfast Oatmeal with Egg, Avocado, and Parmesan

Savory Breakfast Oatmeal with Egg, Avocado, and Parmesan

1/2 cup of quick cook rolled oats
1 cup of water
1 tsp minced parsley
2 tsp grated parmesan
salt and pepper to taste
1 egg
1 thinly sliced green onion (green parts only)
1/4 avocado, sliced


In a microwave safe bowl, combine the oats, water, parsley, parmesan, and salt. Stir to combine and microwave for 2 minutes (or according to package instructions).

While the oatmeal cooks, cook the egg to you preference.

Once the oatmeal has cooked, stir to combine, taste, and add salt and pepper as needed.

Top the oatmeal with egg, avocado slices, and green onions.
